Low Carb Diet Meal – What Does it Look Like?

What does a low carb diet meal look like for a vegetarian? Well, there are many misconceptions about protein and carbohydrates; vegetarians can create a carbohydrate-reduced diet as well. 

By combining an understanding of protein to carbohydrate ratios in vegetarian foods, and exploring the glycemic index of the carbohydrates that you choose, you can create a meal that is low in carbs, easy to digest with sugars being released into the blood stream at a reasonable rate.

One lovely veggie meal that is relatively low in carbs would be a spaghetti squash with a glycemic index of less than 20 and carbohydrates for the whole squash about 16 grams.

Here goes:

  • Sauté lightly in the best olive oil that you can afford,
  • 1 medium sized onion
  • 2 cloves garlic, minced
  • Small piece of ginger, minced
  • when soft add,
  • 1/2 red pepper
  • 1 diced tomato
  • 4 mushrooms
  • at the end add,
  • 1 cup of spinach or other dark green leafy vegetable
  • set aside

Cut the squash in half; bake the squash in the oven for 30-40 minutes in about 1 inch of water or until soft to touch with a fork.

Remove from the oven and using a fork rake though the squash so that the squash meat comes up like noodles, add the mixture from above to the two halves and sprinkle with crushed peanuts. If you eat dairy you can add a little grated cheese as well and brown in the oven till melted.

Add a salad of your choice and you have a wonderful meal, relatively low in carbs. This is a really tasty low carb diet meal and I’m sure, using this recipe as a guide you will be able to come up with many more! Low carb eating is possible for vegetarians and with a little imagination you will be losing weight soon.
